LOUNGING AROUND

This day and age none of us spends enough time in relaxation mode. However, when you do find time to sit when you do find time to sit by the pool, hang out with friends in the park,  flick through a magazine on the sofa or snuffle through the afternoon movie, make sure you have one of these delicious cocktails beside you.

FROZEN MINT JULEP

The precise origins of the Mint Julep are lost in the mists of time, but the cocktail was probably first made somewhere in the southern United States in the 18th century. This version is delicious.

The word “julep'probably derives from the Arabic word julab, meaning rosewater', and a julep has been a sweet, medicinal drink since at least the 15th century, Today, the Mint Julep cocktail is regarded as the quintessential drink of the southern United States.

Mint Juleps are traditionally served in a special silver or pewter julep cup, which is held only by the bottom or top edges, to allow the condensation to turn to frost. One would be particularly apt for this Frozen Mint Julep. However, if you don't have a suitable tankard to hand, a Collins glass, highball glass or tumbler will more than suffice. Use a good quality bourbon or whiskey, though, and fresh mint is absolutely essential. absolutely fresh mint sprig

 

SERVES 1
crushed ice
2 measures bourbon whiskey
1 measure lemon juice
1 measure sugar syrup
6 fresh mint leaves

Put the crushed ice into a blender or food processor, add burbon, lemon juice, sugar syrup and fresh mint and blend at low speed until slushy. Pour into a lowball glass and dress with a fresh mint sprig


CRANBERRY COLLINS

 

The classic Collins drink is made with gin, but its many variations are made with other spirits, so try this one for size.,

SERVES 1
2 measures vodka
3 measure elderflower cordial
3 measures white cranberry and apple juice soda water lime slice

Shake the vodka, elderflower cordial, and white cranberry and apple juice over ice cubes until well frosted. Strain into a highball glass with more ice cubes and top up with soda to taste, Dress with a slice of lime.


BANANA COLADA

 

SERVES 1
4-6 ice cubes crushed
2 measures white rum
4 measures pineapple juice
1 measure Malibu
1 banana, peeled and sliced pineapple wedges

Whizz the crushed ice in a blender with the white rum, pineapple juice, Malibu and sliced banana, Blend until smooth. then pour without straining, into a chilled highball glass and serve with pineapple wedges and a straw


LONG ISLAND ICED TEA

 

Long Island Iced Tea - originally a simple combination of vodka and a dash of cola - dates back to the days of American Prohibition, when it was drunk out of cups in an attempt to fool the FBI that it was innocuous iced tea.

SERVES 1
2 measures vodka
1 measure gin
1 measure white tequila
1 measure white rum
1/2 measure white crème de menthe
2 measures lemon juice
1 tsp sugar syrup cracked ice
cola lime or lemon slice

Pour the vodka, gin, tequila rum. crème de menthe, lemon juice and sugar syrup over ice cubes and shake vigorously until well frosted. Strain into a highball glass filled with cracked ice and top up with cola. Dress with a lime or lemon slice.


CUBAN SPECIAL

SERVES 1
2 measures rum
1 measure lime juice
1 tbsp pineapple juice
1 tsp triple sec pineapple wedge
If you leave out the pineapple juice and wedge from the Cuban Special, it becomes a Cuban Sidecar - but don't, because the fruit turns it into a longer drink that's perfect for an afternoon in the sun.
Pour the rum, lime juice, pineapple juice and triple sec over ice cubes and shake until well frosted Strain into a chilled cocktail glass and dress with a wedge of pineapple
